What would a beautiful New England day be without staying in to bake? Well, when you are nerdy about baking, then it’s ok to get your bake on.
Today Doug made English muffins.
On a scale of 1-10 he said they are “easier than ciabatta, but more difficult than bagels”. I think in bread baking terms that means they had to rise a couple times, but overall they are worth the trouble.
To top the muffin glory, I made pumpkin butter.
Super easy and delicious.
1 15-oz can Pumpkin
1/2 c. honey
1 tsp. freshly ground cinnamon
1/4 tsp. freshly ground nutmeg
1/8 tsp. ground cloves
1/8 tsp. ground ginger
pinch of salt
Simmer pumpkin and honey for 15 minutes. Add spices for remaining 5 minutes. Mixture should thicken to desired consistency.
Being the inattentive person that I am, I put the spices in right away. It still tastes delicious!
