Curried Carrot Soup

Usually I don’t carry a camera with me when I go for a walk, but today I thought I’d bring one just in case. Sometimes there is something eye catching, unique, or odd that must be remembered and shared. Nothing like that happened today. However, I always love coming up to this spot on the way back home. I love how the trees are lined up and hang over the sidewalk as if it were a tree tunnel.

When I got home I put all of those soup techniques to use and made curried carrot soup from my Everyday Food: Great Food Fast cookbook.

I decided to stick with the curried carrot soup because it reminds me of sitting at a cafeteria in college dipping my spoon into a bread bowl filled with the spicy, orange soup.

This version of the soup didn’t come out quite as I had hoped as it was thin and lacked a spice (maybe salt?) that needed to round the flavor. Once I added a dollop of sour cream, I was pleased with the creamy consistency.

Add homemade bread, and the meal is complete.
