There is one cookie that has made several appearances this year. I’ve made it for parties, for picnics, the bake sale, and just for fun. This cookie has all the pieces to make a great confection. It has a sugary exterior, soft inside with chunks of chocolate and a bite of real ginger.
If you guessed chocolate gingerbread cookies then you are quite right. I first made these for a potluck dinner last year, and have been in love since. They offer the satisfaction of a chocolate chip cookie, but the molasses and fresh grated ginger give it an extra special touch.
If you are looking to make a statement at a cookie swap, to bring something special in for a holiday party, or need to conquer a cookie craving, then look no further.
Here is a look at my snapshots of one of my new favorites.
