No-Knead to Worry

This week has proven to be gluttonous, with excessive amounts of candy, cookies, chips and dip, and not so figure friendly dinners. One night it was baked macaroni and cheese (I could argue that it’s not that bad for you) and another it’s deep dish pizza. The previous pictures are the fixings for a homemade, fluffy, 3 piece per serving pizza pie.

This recipe is from The King Arthur Flour Baker’s Companion cookbook. The crust was thick, airy, and doughy– all things I like in a pizza. The recipe is simple as it is no-knead, and if you don’t have the semolina you can just add extra all-purpose flour. Obviously, they want you to use King Arthur Flour. I also highly recommend it, and so does America’s Test Kitchen. The quality of flour does make a difference in baking.

So if you’re sick of the same old thin crust, greasy pizza from the joint down the street, then whip up a batch of this pizza, and you’ll be happy you did.

Recipe adapted from King Arthur Flour Baker’s Companion
No-Knead Deep-Dish Pizza

1 1/4 cups lukewarm water
3 1/4 cups Pizza Perfect Blend or 2 3/4 cups King Arthur Unbleached All-Purpose Flour + 1/2 cup semolina flour
2 tablespoons olive oil
2 teaspoons instant yeast
1 1/2 teaspoons salt
1 cup of your favorite pizza sauce
2 teaspoons mixed Italian herbs (oregano, parsley)
1 1/2 cups grated cheese of your choice
additional toppings of your choice
Grease (or oil with olive oil) a 9 x 13-inch or 12 x 12 inch pan. Mix and stir the dough ingredients together to form a slightly sticky soft dough. Let the dough rise, covered, for 30 minutes, then place it in the pan. Let it rest for 10 to 15 minutes, then pat and stretch it to cover the bottom of the pan. Let it rest, covered, for 30 minutes.

Spread the pizza with the sauce, and bake it in a preheated 425°F oven for 15 minutes. Remove it from the oven, and add the seasoning, cheese, and toppings. Return it to the oven and bake for an additional 10 to 15 minutes, until the cheese is bubbly and the edges are golden brown. Yield: six large pieces.

Nutrition information per serving (1 piece with sauce and cheese, 179g): 430 cal, 14g fat, 17g protein, 60g total carbohydrate, 2g sugar, 6g dietary fiber, 25mg cholesterol, 1260mg sodium.
