Doug is a lucky man. While he was out and about today I whipped up some roasted cashews for him. We made a deal that whoever won Jeopardy this week got a surprise. Surprise!
I made a batch of spicy and salt n vinegar cashews. The spicy cashews came out good. I put 2 tablespoons of canola oil with some red pepper flakes, cumin, cayenne and chili powder, then roasted in a 350 oven for about 15 minutes.
The salt and vinegar batch did not fare so well. I boiled the cashews in the vinegar. Big mistake. The nuts became bloated and sickly. The did not look like they’d revive. I put them in a 425 oven for about 20 minutes until toasted. So far the verdict is still out on how they came out. Prognosis: not good.
There was a carnation sale at school and a few girls got me flowers. How sweet.
This girl knocked them over as soon as I put them in a vase.
